overnight cinammon chia pudding

Serves 1-2

Ingredients:

  • 3 tbsp chia seeds

  • 100-150ml Plant-based milk (I like to use the Koko coconut milk for this cinammon version)

  • 1 tsp ground cinammon (+ more for dusting on top)

  • 1/2 tsp vanilla extract

  • 1 tsp honey

  • Toppings: granola, cocoa nibs, berries, peanut butter, jam, yoghurt.

Method:

  1. Mix the ingredients together well in a bowl or tupperware with a lid and leave to thicken in the fridge overnight.

  2. In the morning, serve with toppings of choice and an extra dusting of cinammon.
