Coffee and banana porridge

Think coffee and walnut cake but porridge.

Coffee and Walnut Porridge

Serves 1

Ingredients:

  • 1 Banana

  • 1 tsp Butter/Oil

  • 40g Rolled Oats

  • 40ml Coffee

  • 150ml Milk

  • 1 Square Dark Chocolate (chopped)

    Optional: (1/2 tsp Vanilla Extract, chia seeds, honey, agave, jaggery)

Method:

  1. Mash half a banana and add with the rest of the ingredients apart from the choc and cook for 5 minutes over a medium heat, stirring occasionally.

  2. Half the rest of the banana and gently fry with some butter and oil (so the butter doesnโ€™t burn) with some sugar or jaggery until golden brown. Fry both sides for about 3 minutes whilst the porridge is cooking.

  3. Serve into a bowl and top with the fried banana, chopped dark choc and other toppings of choice.
