5 min ramen

What’s there not to like about ramen? Specially this time of year when it’s frickin freezing and all you want is wholesome bowls of goodness. Here is another dummie guide to making a cheat version of your fave Shoryu/Wagamamas or whatever it is, CLASSIC.

5 Min Ramen

Serves 2

Ingredients:

  • Diced seasonal vegetables (carrots, celery, butternut squash)

  • Sweetcorn/peas/pak choi/mangetout

  • 1 serving of noodles

  • 700ml-1L Boiling Water

  • 1 thumb of Ginger (peeled/grated)

  • 1 TBSP Sesame/Rapeseed Oil

  • 1 Onion (chopped)

  • 2 Garlic Cloves (grated)

  • 1 TBSP Soy Sauce

  • Pinch of Sea Salt/Pepper (to taste)

  • Optional: Egg, sesame seeds, pumpkin seeds, miso paste, seaweed.

Method:

  1. Sauté onion in some oil until soft, add the ginger and garlic after it’s been sautéed a little.

  2. Once everything has been softened, brown the diced vegetables over a medium-high heat for about 1 minute.

  3. Pour the boiling water, bring to a boil then a simmer with lid on till vegetables are al dente.

  4. Add the noodles and cook until al dente too. Then if adding egg, crack open the egg and drop into the broth, lid on for about 1 minute until cooked.

  5. Take off the heat and add soy sauce and optional miso paste with a pinch of salt and pepper.
