Avo pesto pasta (V)

Serves 1 (feel free to double up!)

Ingredients:

  • 1 Avocado

  • Bunch of Fresh Basil + more for serving

  • 1 TBSP Grated Parmesan + more for serving

  • 1 Garlic Clove (finely grated)

  • 1 tsp Pine nuts

  • 1 tsp Olive Oil + more for serving

  • 1 TBSP Cold Water

  • 100g Wholemeal Pasta (I use Penne)

  • Pinch of salt, pepper

  • Pinch of Chili Flakes

Optional: Shredded smoked salmon/chicken/tofu, fried/poached egg, spinach, kale, grated courgette.

Method:

  1. Fill a saucepan with water and bring to a boil with a pinch of salt for 10/11 minutes (al dente).

  2. Meanwhilst the pasta is cooking, add all the other ingredients into a food processer/blender and blitz till smooth. (You can also shred some smoked salmon for some protein like I did and set aside.)

  3. Once pasta has cooked, drain and mix in the pesto and any other optional ingredients.

  4. Serve Up!
