kale caesar salad

Kale Caesar salad (V)

Serves 1

Ingredients:

  • Handful of Kale (washed, tough stalks removed)

  • 1/2 Avocado (cubed)

  • 1 Slice of Wholemeal Bread

  • Drizzle of Olive Oil

  • Pinch of Sea Salt, pepper (to taste)

Salad Dressing:

  • 3 TBSP Milk

  • 1 TBSP Grated Parmesan Cheese

  • 1 tsp Olive Oil

  • 1/4 tsp Garlic Granules

  • 1 tsp Tahini

  • 1/4 Lemon (juice)

  • 1/2 tsp Apple Cider Vinegar

  • Pinch of salt, pepper

  • Optional toppings: Sunflower seeds, pumpkin seeds, fried egg, shredded chicken, extra grated Parmesan.

Method:

  1. Preheat the oven/grill to 250°C (or highest temperature).

  2. Remove edges of the bread and cut into small cubes, drizzle olive oil on a baking tray and mix the croutons. Season with salt and pepper, grill/bake for about 3 minutes till crispy (tossing halfway). Set aside

  3. Meanwhile, massage kale thoroughly using your hands with some olive oil until it’s tender. Place on baking tray, season and bake for about 2 minutes.

  4. Blend/mix the dressing ingredients.

  5. Mix the crispy kale with the sauce and top with the rest of the ingredients.
