Salmon soba noodles

Nothing better than a tasty bowl of noodles with a miso dressing to hit all the umami notes. Feel free to alter the the recipe using whatever ingredients you have e.go edamame beans, sweet corn, broccoli, peas, spinach.

Salmon Soba Noodles

Serves 2

Ingredients:

  • 2 Salmon Skin-On Fillets

  • 1 Pak Choi

  • 2 servings of Soba Noodles

  • 1 tsp Sesame Seeds

  • 1 tsp Chilli Flakes

  • 1 tsp Sea Salt

  • 1L Boiling Water

    Sauce:

  • 1 Miso Sauce Sachet/1 TBSP Miso Paste

  • 1 TBSP Soy Sauce

  • 2 tsp Sesame Oil

  • 1 packet of wasabi (optional)

Method:

  1. Bring the water to a boil in a medium pan, then add a pinch of sea salt. Add the noodles and let them cook according to package instructions (6-7 minutes roughly)

  2. Meanwhilst, wash the Pak Choi and separate leaves and other veg you may add to the pan. Add vegetables to the pan and let cook through with noodles.

  3. Once those are cooked through, rinse noodles in a large colander with cold water and gently shake to separate. Save some noodle water for the sauce.

  4. To make the sauce mix the sauce ingredients together. Feel free to add more soy sauce to make it stronger, and some of the noodle water to help combine.

  5. Pour a tsp of oil into the pan with the veg and fry off over a medium to high heat for about 5 minutes, mixing the noodles. Then incorporate the sauce and serve!
