smashed avo on pitta bread with pine nut falafel

takes no longer than 5 minutes, plant-based. You can always double the recipe or make more if serving more people or just need some more sustenance. Enjoy!

Serves 1

Ingredients:

  • 3 falafels (I use the Gosh! Spinach and Pine Nut Bites)

  • 1 Wholemeal pitta bread

  • 7 pine nuts

  • Extra-virgin olive oil

  • Toppings optional: chopped herbs (mint, parsley, coriander), sumac, chilli flakes, extra-virgin olive oil, balsamic glaze, tahini.)

Smashed Avo

  • 1/2 ripe avocado

  • 1/2 tsp tahini

  • 1 tsp sesame seeds

  • 1/2 tsp extra-virgin olive oil

  • 1/2 tsp sumac

  • Pinch of chilli flakes

  • Pinch of garlic salt/sea salt

  • Optional: cherry tomatoes (quartered length-wise)

Method:

  1. Toast your pitta bread on a dry pan or in a toaster until warm, turning half-way.

  2. Meanwhile the bread is toasting, smash the avocado onto a chopping board and then. add the rest of the smashed avocado ingredients with a fork and give it a mix.

  3. Toast the pine nuts on a high heat until golden brown on a small saucepan and leave them aside. (about 1-2 mins).

  4. Heat up you falafel in the microwave or oven (according to the package instructions) until warm and crispy. I microwaved them for 50 seconds and then on a the same dry small saucepan on a medium-high heat I toasted them until they got crispy on the outside, turning them around.

  5. Once, your mis-en-place is done, you are ready to assemble. Spreading the smashed avocado on the pitta bread, followed by the falafel and drizzle with some more tahini and optional toppings, sprinkle the pine nuts last.
