my go-to porridge

Serves 1

Ingredients:

Porridge

  • 1 apple (grated)

  • 15 g oat-bran (recommend using oat bran instead of porridge oats for this as they are quicker to cook alongside the apple but normal oats are fine too they just need double the amount of liquid)

  • 250ml plant-based milk/water (I did half of each)

  • Handful of chopped dried fruit (raisins, sultanas, dried apricots, prunes, dried figs)

  • 1 TBSP chopped nuts (walnuts, almonds, cashews)

  • 1/2 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1 tsp molasses/maple syrup/agave

  • a pinch of nutmeg

  • 1 tsp ground linseed (optional)

Compote

  • Handful of blueberries

  • 1 tsp molasses/maple syrup/agave

  • 1/2 juice of a lemon

  • 1 tsp coconut oil (optional)

  • 1 tsp orange blossom water (optional)

Method

  1. On a small saucepan bring the ingredients for your blueberry compote on a medium-low heat adding a splash of water and gently stir half way through cooking whilst beginning to cook your porridge, until they are soft and juicy for 10 minutes.

  2. Add all your porridge ingredients except the dried fruit in a seperate small saucepan on a medium heat for 5-10 minutes, adding your dried fruit halfway through cooking, stirring occasionally until oats are cooked through and creamy.

  3. Serve your porridge in a bowl and top with the compote and optional toppings such as a drizzle of nut butter, sprinkle more of chopped nuts, or even a drizzle of honey if you like things extra sweet.
