2 ingredient pancakes

Serves 1

Method:

  1. Blend/mash the pancake batter ingredients (remember to leave some sliced banana to top it off, if preferred of course!)

  2. Heat a small frying pan over a medium-high heat with a little coconut oil and pour half the batter. Allow to bubble one side for 30 seconds before flipping over and repeat for the rest of the batter.

  3. Meanwhilst in a separate small saucepan gently heat the ingredients for the chocolate sauce over a medium heat until everything is melted (to make it more liquidy add a little milk).

  4. Dish up the pancakes and serve with any toppings of choice (I love to have them with that choc sauce, the rest of the sliced banana, chopped dark chocolate, some coconut yoghurt, almond butter, chopped dates, a drizzle of honey/syrup and an extra pinch of sea salt for taste!)

Pancake Batter

  • 2/3 Banana (1/3 sliced)

  • 1 Egg

  • 1/2 tsp Baking Powder

  • 1/4 tsp Coconut Oil (for frying)

  • 1/2 tsp Vanilla Extract (optional)

  • 1/2 tsp Ground Cinnamon (optional)

  • 3 tsp Vanilla Protein Powder (optional)

  • Pinch of Sea Salt (optional)

Optional Healthy Choc Sauce

  • 1 tsp Coconut Oil

  • 2 tsp Cocoa Powder

  • 1 tsp Maple Syrup
