quick stir fry

There’s no right or wrong here, use whatever veg you have and rice. You can make this vegan very easily without adding the egg or substituting for another protein such as tofu.

Quick Stir Fry

Serves 3-4 (~15mins)

Ingredients:

  • 3 Cups Leftover Rice (I use Wholegrain)

  • 1/2 head of Broccoli (cut into florets)

  • 3 Free-range Eggs

  • 1 Celery Stick (chopped)

  • 1 Pak Choi

  • 1 Thumb of Ginger (grated)

  • 1/4 tsp All spice

  • 3 Garlic Cloves (grated)

  • 1 TBSP Sesame Oil

  • 1/4 tsp Fish Sauce

  • 3 TBSP Soy Sauce

  • 1 tsp Sesame Seeds (toasted)

Method:

  1. Heat a medium to large pan over a medium to high heat with some sesame oil, once pan is hot, add in rice

  2. Let rice cook and fry a little for about 5 minutes. Mean whilst wash and separate Pak Choi leaves and slice into three width wise

  3. Set rice aside and fry the vegetables and celery over a high heat till they are charred and toss halfway through for about 4 minutes (you can carefully add a splash of water to speed up the cooking) and set aside

  4. Whisk eggs and cook over a medium heat with a little more oil. Slowly fold egg from edges towards the middle

  5. Lower the heat to a medium-high heat, add some more oil then add the ginger, garlic, let cook for about 2 minutes. Add spices and fold egg through.

  6. Once spice are well fragrant, add a bit more oil and rice, stir through the veg and turn the heat up to a high. Let it fry for about 2 minutes, turn heat off and add soy sauces

  7. Sprinkle some toasted sesame seeds and drizzle some siracha sauce
