Quick Homemade Nando’s

Shoutout to air fryer crew, this one is for you. A quick 15 minute one for a midweek lunch or dinner. Light work.

Quick Homemade Nando’s

Serves 1

Ingredients:

  • 1 Rotisserie chicken breast/leg and wings

  • 1 Sweet Potato (sliced into chips)

  • 1 Red Pepper (sliced into thing strips)

  • 1 Pack of Asparagus (trimmed)

  • Handful Salad Leaves

  • 1 spray of Olive Oil

  • Nando’s Sauce (choice is yours! I used Lemon & Herb as chicken was already spicy, medium is my go to though)

  • 1 Pinch of Sea Salt

  • 1 Pinch of Ground Black Pepper

Method:

  1. Place sweet potato in a bowl of cold water and heat up in microwave for 4-5minutes until soft.

  2. Once soft, place all the veg in air fryer with a spray of olive oil and a pinch of sea salt and air fry for 10 minutes on maximum temperature (200 degrees usually).

  3. Meanwhile when closer to time heat up  chicken on a pan or microwave for 1.30 minutes.

  4. Add chicken to air fryer with vegetables and air fry for another 5 minutes.

  5. Plate up with some salad on the side and most importantly drizzle that Nando’s Sauce (be generous ;)
