Switching things up with a non-breakfast recipe. This one is perfect for those hot summer evenings looking to surprise your guests with a delicious, wholesome and most importantly nutritious meal. Definitely takes you back to holiday. I made this one in Spain, when visiting my family in the North East of Spain. Very simple and nutritious.

Seabass with Grilled Courgette and Potato

Serves 1-2 (double up if serving more guests)

Ingredients

  • 2 Fillets of Seabass/Seabream/Cod/Haddock (De-boned, cleaned and filleted)

  • 1 Small Courgette (sliced)

  • 1 Small Potato (sliced)

  • 2 Cloves of Garlic (thinly sliced)

  • 1tsp Dried Parsley

  • Olive Oil

  • Pinch of salt

  • Pinch of ground black pepper

  • Serve with Rice, Bread, or on its own :)

Method

  1. Boil the veg in water in a saucepan, bring to a simmer until al dente (10-15 mins)

  2. Heat a large saucepan with oil over a high heat. Drain the veg once they are cooked through and fry off till golden flip sides (4-6mins) Turn heat down to medium and cook the garlic.

  3. Set aside on a plate, add some more olive oil to the pan and fry the fillets of fish over medium-high heat (4mins) - skin side down first. Flip over and cook for another 3 mins.

  4. Serve on the plate with the veg and serve with rice, bread or on its own! :)
